PB&J Bars


This dessert could quite possibly be my new favorite thing. Did you like PB&J sandwiches as a kid? Yes? Ok, then you need to eat these. When I was younger I actually hated Jelly so I stuck to straight up peanut butter sandwiches. I started eating jelly in college ( yes I waited that long) and now I can't believe I didn't have it sooner!

If you, like my five year old self does not like jelly you can always use something else that is delicious in the middle of these bars. Oh I don't know, like nutella. Yup, that just came to me. Genius. Keep everything the same, just add nutella to the top instead of jam. I used strawberry jam for this, but feel free to use whatever kind you like.

I found yet another reason to use my food processor. ( I swear I have used it at least 6 times in two weeks.) If you don't have a food processor you can chop the peanuts by hand and then use a kitchen aid mixer.

Just an FYI, as these bake, your house will smell like peanut-buttery goodness.The tart jelly contrasts with the creamy peanut butter and your mouth will do a happy dance when you eat these. I found this recipe in this month's issue of Everyday with Rachael Ray. I looked online, but I cannot find it.
