Cheesy Chicken,Bacon & Cauliflower Pasta


Do you ever look in your fridge and think," What can I make with all of this food?" I did just that more than once this week.I scanned my fridge and then I found this amazing recipe for roasted cauliflower with Parmesan and pancetta and I was hooked. Then I thought, how can I make this into an amazing main dish? Well that was easy. Combine chicken,bacon.cauliflower, pasta and a boat load of cheese and you have yourself one heck of a pasta dish.

WIAW & Bacony Breakfast Pizza


Is" bacony" a word?Probably not, but basically I want you to know this pizza is covered in bacon.Magical, mapley (yup, not a word either) bacon. I was trying to think of what to have for dinner tonight and it came to me while I was spinning (hey at least I was exercising)- breakfast pizza. Breakfast pizza is a great meal for breakfast, lunch, or dinner.It would even be nice for a brunch. There are even so many ways you can prepare it. If you have alot of time you can make your own dough. If you are in a rush you can use refrigerate dough. But before I get to the recipe, let's see what I ate this week for WIAW!

(Healthy) Chunky Blue Cheese Dressing


Blue cheese dressing is one of those guilty pleasures for me. It is so thick and creamy and I can eat it with anything. It is a perfect pairing for sandwiches, salads, wings, and pizza. Hold up- Pizza? Does anyone else dip their pizza in blue cheese? I learned this delicious habit in college and have not looked back. Providence College grads, I know you dip your Golden Crust pizza in blue cheese.

Greek Goddess Chicken


This recipe was a day in the making. I knew I had chicken. I knew I had cherry tomatoes and feta. I kept thinking all day what I could do with these staples and then it came to me. Chicken with tomatoes, spinach and feta. Done. Dinner is served. Truthfully, I made up the name Greek Goddess Chicken, but quite frankly, I really liked the name. It has as a yummy Greek staple, feta cheese, which I thought marries perfectly with cherry tomatoes and fresh spinach.

WIAW & Yummy Egg White Veggie Cups


This was a great week in food for me so my WIAW . I cooked some amazing dishes and ate some delicious ( and sometimes unhealthy dishes) out. I also have an yummy and quick breakfast recipe for you.


Breakfast: Kashi Fiber cereal with kiwi and almond milk

Lunch:  Breakfast burritto with cheese, hashbrowns, refried beans etc. It was insane and enormous.


Dinner: on two separate occasions
Caprese salad on Mother's Day with HUGE beefsteak tomatoes.

My second ever encounter with Five Guy's Burgers. I of course got a hot dog with bacon and cheese. They even cut the dog in half to make it extra crispy. MMmm pork on pork!!

Blueberry Lemon Breakfast Cake


Happy Mother's Day to all those awesome Mom's out there! Especially my awesome Mom, Barbara! We had an awesome brunch at my sister's house and I of course brought this luscious cake. I saw this recipe a few months ago, but was waiting for blueberries to get more in season than the dead of the winter. This cake is the perfect addition to any summer brunch or party. The brightness of the lemon and tons of plump blueberries made me feel like summer was right around the corner. Thank God. I'm sick of winter.

Minty Basil Pesto Pasta


Pesto has officially been lifted to another delicious level. I found yet another moment to break out my food processor to make this delicious sauce. Adding mint to this pesto gives it such a bright, fresh flavor, which is perfect for Spring!  This would actually be a yummy sauce to marinate chicken or shrimp in also. I of course tossed this pesto with the last of our delicious pasta from Seattle.

Tangy Grilled Potato Salad


Carb lovers rejoice! A have found yet another potato salad recipe that is simple to prepare, but is different than your usual run of the mill potato salad. I saw this recipe on the Chew last week and I could not wait to fire up my grill! The grill will give this salad another layer of depth and flavor so try not to skip the grilling if you can. I even got more excited when I went to the market and found purple potatoes! I figured in addition to the potato salad being delicious it would also be beautiful!

Heck, I might even have them for breakfast. I might even go as far as saying they are perfect when you are craving something sweet. I would totally eat them for dessert and not feel guilty about it at all!

Cheddar & Jalapeno Corn Bread


Sweet, Spicy and delicious. That is what these muffins are. I ate these delightful cheesy muffins with my sweet potato chili, and they were a great accompaniment. You can totally make these into corn bread, I just happen to really like these in muffin form. They are like perfect individual servings that you can pop in your mouth without the need to cut the pan for another serving.

Spring has not sprung in Rhode Island yet. We had one week where it was 80 degrees F every day, and now it has been dreary and rainy ever since. What happened to the sun? Please come back.
