I saw this recipe on the Food Network and I was intrigued.The Gist: You marinate bone in-skin on chicken overnight and then stick breadcrumbs on it then grill it. You with me? Basically the fat on the chicken melts and makes the bread crumbs crispy, but you still get a yummy smokey flavor from the grill. Best of both worlds? Heck yes!

Greek Goddess Chicken
This recipe was a day in the making. I knew I had chicken. I knew I had cherry tomatoes and feta. I kept thinking all day what I could do with these staples and then it came to me. Chicken with tomatoes, spinach and feta. Done. Dinner is served. Truthfully, I made up the name Greek Goddess Chicken, but quite frankly, I really liked the name. It has as a yummy Greek staple, feta cheese, which I thought marries perfectly with cherry tomatoes and fresh spinach.

OMG People. We have a winner! This chicken dish is amazing. If you remember me telling you all, Toby and I rarely eat the same thing for dinner due to his meat loving tendencies and my Mexican food obsession. I couldn't even remember the last time we had the same thing for dinner. Tonight it happened. I made this double crunch chicken and it was a hit- with both of us!

Hawaiian Chicken & Coconut Lime Rice
Now that the weather is getting nicer it was time to brush the dust off of our outdoor grill and start grilling!! I was fiddling around on Pinterest ( like any other normal day of course) and came across a recipe for Hawaiian chicken. What makes this chicken "Hawaiian" I'm not entirely sure.I have never marinated chicken in coconut milk before, but it was such a great idea!

Coffee Crusted Roast Chicken
I have been wanting to roast a whole chicken for awhile now. I saw a recipe on Whole Foods.com and I got super excited. Toby and I really enjoy coffee crusted beef and pork so chicken would be next on the list I suppose. You cannot really go wrong with a recipe that has three directions and you let it roast in the oven for an hour. So easy!

BBQ sauce.Beer.Blue Cheese. Three of my favorite things. Throw it all together in a Mexican classic and you have a sure fire Super Bowl delight that will wow all of your guests. I first saw this recipe on Closet Cooking. I love the idea of BBQ chicken and blue cheese together. This would also be yummy with buffalo chicken. Hooray for healthy non-msg ridden Chinese food. Now, don't get me wrong. I am all about Chinese food from time to time. I crave Chinese food often so if I can cook it at home then that is a plus. The only problem I have with this is that most times my version of Chinese food isn't really that comparable to food you find in restaurants. That is...until now!

Lemon & Honey Glazed Crock Pot Chicken
Hello again Citrus Blog Hop!I have been on a crock pot stint as of late. I have been so tired after work and the gym and I figure it would be nice to have dinner made when I get home with minimal effort. And along came my crock pot. I googled recipes last night and found this stunner from Rachael Ray. This recipe cannot be any easier to whip up, not to mention affordable. Bone in chicken is very cheap these days. I think it was $1.50 for a pound. That is pretty crazy.

I was super excited when Toby and I got a signed Bobby Flay cookbook from my mother in law this Christmas ( Thanks Becky!) It is a great cook book. I was leafing through it today and decided to make an amazing recipe for breaded chicken cutlets, creamy brie cheese, prosciutto, and an arugula salad.
