Superbowl Video Special: BBQ Chicken Tacos & Blue Cheese Cole Slaw

BBQ sauce.Beer.Blue Cheese. Three of my favorite things. Throw it all together in a Mexican classic and you have a sure fire Super Bowl delight that will wow all of your guests. I first saw this recipe on Closet Cooking. I love the idea of BBQ chicken and blue cheese together. This would also be yummy with buffalo chicken. Check out my video with Three Desert Films on how to make them!

BBQ Chicken ( 10 servings)

1.5 LB of chicken
12oz of your favorite beer ( I used Newport Storm Octoberfest)
1 Cup of your favorite BBQ Sauce and more after chicken is cooked

I cooked my chicken in the crockpot on low for 4 hours on low. Feel free to use pulled rotisserie chicken or poached chicken. Either way you cook it, shred it with two forks. After shredding the cooked chicken add as much BBQ sauce as you like and add to tacos.

Blue Cheese Cole Slaw
This is the best cole slaw I have ever made. The blue cheese is such a nice addition to the mixture and it is absolutely delightful!

2 cups cabbage (shredded)
1 carrot (shredded)
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons grainy mustard
1 lemon (juice)
salt and pepper to taste
1/4 cup blue cheese (crumbled)
1 handful parsley (chopped)

1. Mix the cabbage and carrot in a large bowl.
2. Mix the mayo, sour cream, mustard, lemon juice, salt and pepper in a bowl.
3. Mix everything together.
4. Cover and let mellow in the fridge for a few hours.

  1. YUM! These are perfect for Super Bowl...or just because :)

  2. They were so good! I housed three in about a minute. This blue cheese slaw is my new favorite thing.

  3. The blue cheese slaw definitely caught my eye! I love the pictures as well! Beautifully done!

  4. The slaw was my favorite part! It was so flavorful. This is my new go to recipe for slaw. So different!

  5. Yes, I think the slaw is what really puts these over the top-yum! Your pictures do entice, I sure wish I had been there to taste these!

  6. My husband and I had these last night and I think they were amazing. From the smell in the house to the great flavor everything was just fantastic. The only thing we did was add more blue cheese because we could barely taste it in the slaw, but that's a preference thing.

    1. Oh I'm glad! I am now a LOVER of blue cheese slaw. It is basically amazing. Glad you tried it out. It is a keeper!
