Tangy Green Apple & Kale Salad



Ever get tired of plain ole romaine? Yup, I do. I try to rotate lettuce for salads because the same kinds of salads get boring to me. I try to do baby spinach,frisee and now my new favorite salad item KALE!!! 
If you haven't tried it yet, kale is a really delicious and versatile green. You can blend it into shakes,saute it like you would spinach or use it as lettuce for a salad!I especially love kale in this salad because it stands up to the tangy lemon dressing.

You Can Cook!!! No Excuses.....


It is so hard for me to believe people when they tell me they hate cooking or they have no time to cook. I cringe at the thought of getting take out every night and having nothing but some shriveled up lemon in your fridge. Not to mention the boat load of money one can spend on take out. And don't get me started with cereal for dinner. I just don't get that. Ladies and Gentleman, I am here to tell you YES! You can successfully make dinner every night. Throw out those take out menus!

Grilled Eggplant Salad





The weather has been clearing up in Rhode Island as of late and you know what that means….. We are grilling! I love grilling because I don’t have to use my stove and I love the slightly charred texture it gives food. I especially love grilling veggies because they get super tender inside, but their outside texture is crisp and delicious. Eggplant is one of my favorite veggies to grill because it holds up well to grilling and I love the tender center when it is grilled.

Dijon Marinated Leg of Lamb with Mint Gremolata

 I love the versatility of lamb. You can crust it in almost anything, slather sauces on it and use many different cuts to achieve recipe greatness. For this recipe contest I chose to marinate the leg of lamb in dijon, honey, mint and rosemary. What an amazing combination. To add a twist I added some bright mint in a gremolata which is traditionally chopped parsley,garlic and lemon zest. What an easy way to add brightness to a heavier meat like lamb!Mouth watering yet???? Let's continue.

Outside the Kitchen: Baltimore, MD

So I finally back from my trip to Baltimore. What a great city! The people are friendly, you get amazing waterfront views and did I mention the food? Yeah, it is amazing.  I can't wait to tell you guys about the amazing places I went to so you can enjoy the deliciousness too!I met my friend Dan for the day and he took me around and showed me this amazing city.

Broccamole ( like Guacamole, but better)


I have the most amazing snack to share with all of you!I am such a sucker for guacamole and as healthy as avocado is do you really need to eat a whole avocado in one sitting? I think we all know the answer to that. I saw this yummy "guacamolesque" dip and had to try it.
