WIAW & Yummy Egg White Veggie Cups


This was a great week in food for me so my WIAW . I cooked some amazing dishes and ate some delicious ( and sometimes unhealthy dishes) out. I also have an yummy and quick breakfast recipe for you.


Breakfast: Kashi Fiber cereal with kiwi and almond milk

Lunch:  Breakfast burritto with cheese, hashbrowns, refried beans etc. It was insane and enormous.


Dinner: on two separate occasions
Caprese salad on Mother's Day with HUGE beefsteak tomatoes.

My second ever encounter with Five Guy's Burgers. I of course got a hot dog with bacon and cheese. They even cut the dog in half to make it extra crispy. MMmm pork on pork!!







Best Purchase of the week. 

 Tahitian Vanilla Scented Sugar. Hello my love!. I was super excited when I found this. I cannot wait to use it when I make creme brulee!! Any other ideas on what I could use it for?? I was thinking of making cinnamon sugar muffins. Sugar with an amazing aroma of vanilla bean sounds lovely with that!
And as for this yummy recipe, here  is an easy way to use some extra veggies you have left over in your fridge and a way to get a protein packed breakfast. Feel free to try these even without biscuit or crescent rolls also. They will still be delicious and they would be lower in fat! I used goat cheese for these because I love it, but if you don't like goat cheese use whatever cheese you like. Feta would also be delicious.

 Egg White Veggie Cups

Ingredients
1 tube crescent rolls ( or biscuits), 8 serving 
 Egg whites, 1.5 cups or 6 egg whites
1/4 cup chopped tomatoes( squeeze out juice)Onions or scallions chopped 2 tablespoons

Broccoli crowns chopped 2 tablespoons
Peppers 1/4 cup

Directions: 
Take each crescent dough and press into bottom of muffin tin. Make sure you press hard.
Mix all ingredients (except cheese) in bowl and pour into each muffin tin.
Crumble goat cheese on top of each muffin tin
Bake at 350 for 11-13 minutes or until egg does not come off on a toothpick.


Other ideas for these: 
  • Bacon & Cheddar
  • Sausage and Ricotta
  • Tomatoes,Spinach and Feta
