Falafel Burgers

Hello stack of fiber loving goodness

I would call it a goal of mine to make as many tasty variations of veggie burgers that I possibly can!Cue in Rachael Ray and her millions of burger recipes. I like veggie burgers because they are packed with fiber and protein and are way cheaper than making meat burgers. There are so many variations that you can make and change depending on what you have on hand. That is the best part! Let the creative juices flow!

 These veggie burgers were meal three made in my food processor. As I said in previous posts this week, it is such a pain in the butt to use a food processor. Or I am lazy. Either way. I have to say, I may start using my food processor more often after these burgers. Before this recipe, I would simply mash the beans with a potato masher. The food processor gives the chickpeas such a nice consistency. I also added some chopped jalapenos and cilantro. This recipe may seem like it has a ton of ingredients, but alot of them are spices. Feel free to add whatever you want to these. I have eaten my burgers both in a burger bun and also just over a salad. I honestly like them better on a salad. You really get to taste the flavor of them that way without all the bread. I hope you enjoy these as much as I did! I found this recipe in Rachael Ray magazine( my fav) so enjoy!

Cook's Note: This made about six burgers for me. And they were pretty big. The serving size on her site says four. Those were some huge burgers.
