Cilantro Pesto Shrimp


This may be one of the easiest and most flavorful dishes dishes ever made. My friend Katie introduced me to this dish last year and I am so excited to share it with all of you!This a very versatile dish that you can use to make fajitas, tacos, or even a yummy appetizer. I decided to serve these on a bed of cauliflower and goat cheese puree and let me tell you this was quite an exciting dish.

I have a confession to make. I had a food processor for a year before I took it out of the box. I'm not sure what it was that made me so scared to open the box. Honestly, it probably was laziness. It seems like alot of work with the blades, screwing on the top etc. Once I popped this baby open I could not believe it took me to long to use it! I hate to only use it once so I used it three times today( recipes to come this week) so I could get the most bang for my buck. God, I am lazy.

There is literally three steps to this dish. Dump ingredients in the food processor and pulse. Pour marinade over shrimp and refrigerate then grill or saute in a pan. Easy Peasy! The cilantro gives the shrimp such a bright flavor and also makes this low fat, but with full flavor.


Ingredients:

1/2 lb shrimp
1 bunch of cilantro
2-4 tablespoons of olive oil
1 clove of garlic
Juice and zest of a lime
Salt & Pepper

Directions:

1. Pulse cilantro,olive oil, garlic, lime zest and juice, salt and pepper
2. Pour over peeled and deveined shrimp and refrigerate for 20 minutes
2. Grill shrimp for 3-4 minutes on each side or saute until pink

  3. This reminds me of the cilantro lime shrimp I buy at costco all the time! It's one of my favorites!

  4. Oh yum I have never had that! Anything that has cilantro I am usually a fan of so maybe I will try this marinade next time with steak!
