Easiest Caramel Corn Recipe (Made with stuff from your Pantry!)

Look at that sweet goodness!

Toby woke up Sunday morning with a hankering for caramel corn. Seeing I now have this awesome blog we figured we would attempt to make it ourselves. Trying to use whatever we had in our pantry we found a recipe that fit exactly what we had and Boom! We had Caramel Corn. I didn't realize until half way through the recipe was for honey popcorn, but it tasted just like caramel corn and hey it uses no corn syrup so health nuts rejoice! Toby has become somewhat famous for his home made popcorn. I cannot tell you the last time we bought microwave popcorn. To be honest this is 1,000 times better!

So Back to Caramel corn. I had this awesome clover honey from Nashville and it was perfect for this caramel corn. I just bought a ton of sugar so basically we had all that we needed. Here is the recipe and some pictures we took. Get creative with this recipe. Add your favorite nuts,chocolate chips or spices.

Honey Caramel Corn
Ingredients
3 quarts popped corn 
1 1/3 cup sugar
1/3 cup honey
1/4 cup water

Directions
 Pop Popcorn in a large pan to package directions( lightly salt) Don't go crazy. Take a look at ours!

Toby's Epic Popcorn

In a large, greased mixing bowl, combine popcorn, and any other goodies you decide to put into it; mix well.  In a saucepan over medium heat, combine sugar, honey and water.   Bring to a boil, stirring constantly for about 5 to 7 minutes (approximately. 280° on candy thermometer- however I didn't use one).




After 5-7 minutes you will notice the mixture thickens

 Remove pan from heat.  Quickly pour syrup over popcorn mixture.  Stir thoroughly to make sure all pieces are coated.Lay on a baking sheet to cool  Serve immediately.

We made plain caramel corn for Toby and I added chilli powder and paprika to mine. I have also been known to add my own "Leanne Flare" by adding lime zest and chilli powder etc. Spice it up however you like and use your imagination! These can also make some great Holiday gifts! Dress em up in a nice plastic gift bag and a nice bow and you are done. I love dressed up popcorn. Enjoy!
