I love snacks. The saltier the better. I have been having a love affair with potato chips for quite some time, but since their fat content knows no limit to my waist line I needed to find snacks that I could feel good about eating. I have seen roasted chickpea recipes floating around the internet lately and I was intrigued. Chickpeas are really great for you and are very high in protein, which is perfect for a midday snack. It makes it even better when you can the prep time for this snack is about one minute. When you roast these little protein bites at a high temperature they get super crunchy like potato chips. The other best part of this snack is that you can dress these up with whatever spices you want. I chose chili powder, lime zest, seasoning salt and and cumin. They were pretty spicy ( hence caliente in the title) so if you like less spice use less chili powder. These turned out crunchy and delicious! You can even use a packet ranch dressing seasoning and toss the chickpeas in them. I love ranch anything so that would be a winner. Bottom line- if you crave salty, crunchy snacks this is your go to snack!
Caliente Roasted Chickpeas
2 Cans garbanzo beans ( chickpeas) drained
1 Tablespoon olive oil
1tsp chili powder
1 tsp cumin
1/2 tsp seasoning salt
Zest of one line.
1. Preheat oven to 400 F. Drain and rinse canned chickpeas. Pour out on paper towel and pat dry.
2. Toss chickpeas in a bowl with olive oil and chili powder, cumin, and seasoning salt and lime zest.
3. Roast chickpeas for 35 minutes or until brown and crunchy.
4. Store in an airtight container. Enjoy!
