Baked Buffalo Zucchini Fries


I love french fries. I love french fries more than many things in this world ( no, not my husband.I love him more.)I prefer thick cut steak fries, curly fries and most of all tater tots. I hate shoe string fries. Ugh, gross. Unfortunately, my thighs hate french fries. They probably scream every time I bite into the hot, crispy spuds. My thighs will forever be grateful for this creation. Baked zucchini fries are a great alternative to french fries because like their potato counterparts they are crispy on the outside and soft and pillowy on the inside.

I had the idea to make zucchini fries because my sister gave me a monstrous zucchini from her garden. I originally decided to simply make bake zucchini fries, which are delicious, but I decided to take these down one more delicious level. Toss once baked zucchini fries in buffalo sauce and sprinkled with blue cheese ( blue cheese dressing on the side for dipping of course.)I even used my low fat blue cheese dressing to dip! Guilt free! If buffalo isn't your thing, you can omit that step and just have the zucchini fries by themselves. This actually might be a great way to get your kids eating veggies, without them even knowing they are good for you! If you are eating them sans buffalo sauce you can add a 1/2 cup of parmesan cheese to the bread crumbs for some extra deliciousness.

Baked Buffalo Zucchini Fries

Ingredients:
1 large or 2 small zucchinis cut into match sticks
1 cup bread crumbs
2 eggs
1/4 cup buffalo sauce ( I used store bought)
1/4 cup blue cheese crumbles
1 Tablespoon of olive oil or cooking spray
Blue cheese Dressing ( store bought or home made) dressing



















Directions: 
1. Preheat oven to 400 F
2. Pour breadcrumbs into a shallow dish and crack 2 eggs into a bowl.
3. Dredge zucchini sticks through egg then breadcrumbs.
3. Spray sheet pan with cooking spray or olive oil and place sticks on pan skin side down
4. Bake for 25 minutes or until golden brown
5. While hot, toss with buffalo sauce to lightly coat and sprinkle blue cheese crumbles.
6. Eat imminently*** and enjoy!!

*** I noticed that when these sat for awhile they got soggy. Still delicious, but soggy. So don't toss them in the buffalo sauce until you are about to eat them.

  3. Oh Leanne, you and I would get along beautifully. French fries are hands down my favorite junk food in the universe. I am with you on this love girl. That said I just tried baked zucchini fries for the first time a few weeks ago and I am totally hooked. This is definitely a healthy and delicious alternative to fries (although fries will always be #1 in my heart)! :-)

  5. I must make these! Buffalo sauce is a love of mine and being vegetarian its so hard to find vegetarian goodness with out the meat. Im trying these this weekend.
