(Healthy) Chunky Blue Cheese Dressing


Blue cheese dressing is one of those guilty pleasures for me. It is so thick and creamy and I can eat it with anything. It is a perfect pairing for sandwiches, salads, wings, and pizza. Hold up- Pizza? Does anyone else dip their pizza in blue cheese? I learned this delicious habit in college and have not looked back. Providence College grads, I know you dip your Golden Crust pizza in blue cheese.

I have been turning to Greek yogurt for making healthy versions of full fat dressings. My first attempt was ranch dressing and it was delicious. It tasted just as creamy and delicious as regular ranch dressing, but with literally no guilt. I decided to try another dressing, which is one of my favorites. Blue Cheese! Whenever a restaurant has a wedge salad I feel like I have to get it. The smokey, crispy bacon, the cool blue cheese dressing and fresh lettuce. What a magical combination. That was my inspiration to make this healthy blue cheese dressing.

The process of making this dressing is not much different than full fat blue cheese dressing. I had some buttermilk left over from my blueberry breakfast cake so I used that to thin out the dressing. I prefer a thicker dressing so if you like a thinner dressing add more milk. I adapted this recipe from Honest Fare. I think you will enjoy this whether you pour it over a wedge salad or pizza (like me.)

(Healthy) Chunky Blue Cheese Dressing


Ingredients: 
  • 1/4 cup blue cheese finely chopped or in crumbles
  • 1/2 cup non-fat Greek yogurt
  • Juice of 1/2 a lemon
  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • Cracked black pepper to taste
  • Sprinkle garlic powder
  • Sprinkle onion powder
  • 1/4 cup buttermilk
Directions:
  1. Finely chop and then break apart blue cheese into small crumbles. Combine blue cheese, Greek yogurt, lemon juice and vinegar in a bowl or jar and mix well. Add all seasonings and 1/4 cup buttermilk and stir well with fork until cheese is no longer clumping up. Mix well with a wisk until completely combined. 
  2. The thickness of the dressing will vary depending on the brand of Greek yogurt you use.If you prefer a thinner dressing add less buttermilk. If you prefer a very thick dressing do not add any more. 
  3. Pour dressing into a airtight container and refrigerate.

  2. I also can't resist a wedge salad or a good blue cheese dressing. This lighter version sounds good - I'll have to give it a try!
