Truffle Parmesan Popcorn


A couple of years ago my husband and I started popping own popcorn. Like not in microwaveable bag. Let me tell you...best decision I ever made. I know you are probably thinking,but Leanne, individual popcorn bags are made for our convenience. Yup, I totally get it. Microwaveable bags are super easy to make when you need a quick snack. What you might not know is how many chemicals are in that bag! Making your own popcorn on the stovetop or in your own microwave safe container is not only cost effective,but helps you eat clean! I am obsessed with my current popcorn maker ( yes of course I can tell you where to get it.)

A restaurant near us makes the best truffle popcorn I have ever eaten. So good my husband and I got it twice in one week. Yes, it is that good. Truffle Parmesan popcorn is actually easier to make than you may think. I bought truffle butter the other day and it is so versatile. I used it in pasta,risotto and this popcorn. That was all in the same week.

Truffle Butter!!!
You can use truffle oil if you can't buy truffle butter but just use less of it. For me truffle oil is very pungent. Truffle butter in comparison is rich and when warmed up has an aroma of warm mushrooms that are so tantalizing your mouth will start watering. Truffle butter is literally just whipped butter with flecks of shaved black truffles which might very well be liquid gold. So if you haven't had truffle butter yet go for it. Your taste buds will thank me.

Truffle Parmesan Popcorn
















Ingredients
1/2 cup popcorn kernels
1 tsp of canola oil
1/4 cup shredded Parmesan cheese
2 tablespoons truffle butter melted
1-2 tsp of salt

Directions
1. Cook popcorn kernels in oil to packaged directions via stovetop.
2. Heat truffle butter in the microwave for 30 seconds or until melted and add to popped popcorn.
3. Lightly toss popcorn with butter and add salt and cheese.
4. Mix again and serve!

  4. I have black truffle sea salt and every time I open the bag it's like ecstasy in my nose....such an amazing smell. Definitely need to try this!
