Recipe Swap: Giada's Roasted Stuffed Tomatoes

It's recipe swap time! Big thanks to Sarah from A Taste of Home Cooking for hosting the swap! This week's theme is recipes from celebrity chef's recipes. Well, let's just say it was quite easy to compile a list of recipes from celebrity chefs. I have about two million cookbooks from the likes of Mario Batali, Rachael Ray, Bobby Flay and even the Top Chef Cookbook! I always love watching  Giada De Laurentiis because she makes cooking look effortless and well she started off on Everyday Italian and I am about as Italian as they come. Part of me is jealous because of how beautiful ( and skinny) she is and she eats so much of her food. Oh well, I won't complain.

Recipe Swap: Orecchiette with Roasted Tomatoes,Garlic and Spinach

Orecchiette, or little ears is one of my favorite pastas. It holds sauce really well and well... I really think they are so cute. Quick side story, my husband and I actually had the same favorite pasta dish when we first met. We both said we had only ever had one dish at the Olive Garden. We both dared each other to say the dish at the same time and we both said Garlic & Herb Chicken Con Broccoli.I almost died. So that is what we did on our first date. Went to the Olive Garden and both had chicken con broccoli. This dish reminded me of that.

Recipe Swap: Butternut Squash & Apple Soup

Can I start raving about this recipe now? Wow. This soup is delicious. First off, it was really easy to put together. Basically you chop and drop, simmer, blend and serve. I really enjoy butternut squash in the winter and this soup gave me a new way to use it. I am usually not a fan of overly sweet dishes and I was afraid this would be sweet, but it surprisingly was not. The bacon helped cut the sweetness of the squash and cider. It added really great texture also. A big thank you to Colleen who supplied me with this amazing recipe. Check out her blog, Does not Cook Well with Others!

Recipe Swap: Potato Dauphinois

Can I tell you all how happy I was to hear that the recipe swap was potato themed!Potatoes are one of my favorite things.. ever. Mashed potatoes are my favorite, but let me tell you these potatoes may be dethroning them! A big shout out to So Tasty, So Yummy for giving me this recipe. When I saw the picture for these potatoes on her blog I got really nervous, hoping that I could recreate. This dish is perfect for a dinner party because it is so fancy, but is made with such little effort! That is my kind of side dish!

The Nest's Recipe Swap: Moroccan Spiced Spaghetti Squash

Well folks, it is time once again for The Nest's Recipe Swap hosted by A Taste of Home Cooking! The theme this time around was healthy dishes. I was assigned with Moroccan Spiced Spaghetti Squash, which I got from Jessica and her blog The Jey of Cooking. I was super excited about this recipe because I love Moroccan spices and the play on sweet and savory. First off, when I made this my condo smelled like a Moroccan bizarre. It was amazing. Secondly, it was so easy to prepare. You can cook the squash in the oven or microwave. Since I have started up MBA classes again, time is of the essence. Microwave it is...
