Mexican Black Bean Pizzas





Hi Readers! Gosh the last month has literally been insane. My husband and I just bought our first house which is so exciting!It was actually built for a survivor of the Titanic in 1930!  More importantly, the kitchen in this house is literally insane( more pictures to come.) I cannot wait to start cooking in it! The last couple of weeks have been so crazy with having work done to the house and packing up our condo. Phew, I am tired. When I have been running back and forth between houses I need a super easy, but delicious dinner to make.





As you all know I love Mexican food! Any time I can have Mexican food that is super fast to make is even better.  Feel free to use whatever you have on hand.Plus, everyone in the family can make their own with whatever toppings they want!  For the base of this pizza I used whole wheat flour tortillas.Other bases you can use are corn tortillas, pita bread, or English muffins. For the sauce you just mush up the black beans and spread them on the base.You can even use salsa as the base and top them with black beans.  Lastly you add whatever toppings you want ( jalapenos,salsa,veggies) and some low fat cheese then you have yourself one tasty dinner!

Ingredients: 

2 whole wheat flour tortillas
1 can black beans
1 jalapeno chopped
1/2 yellow pepper sliced
1/2 red onion sliced
1/2 cup low fat cheddar cheese
Greek yogurt ( optional for topping)
3 scallions chopped

Directions:

1. Broil tortillas on low until brown. If tortillas start to puff up just pop it with a fork.
2. Drain black beans and add to a bowl Smash with a fork to the consistency you like. I prefer chunkier, but for a smoother consistency you can use a food processor.
3. Smooth black beans on tortilla and add toppings you would like.
4 Top with 1/4 cup of cheese per pizza and put under the broiler to melt cheese ( 1-2 minutes.)
5. Top with scallions and serve with greek yogurt on the side.

  1. Sounds delicious! Have you tried grilling the tortillas? just a thought b/c i hate turning on the oven in the summer!
