Hello easy and delicious breakfast,lunch or dinner! I suppose this is what Rachael Ray would call a BLD ( Breakfast Lunch or Dinner) meal. A really yummy restaurant in RI ( Crazy Burger !!!) makes amazing zucchini latkes, which they serve at breakfast and they are absolutely delicious! I think you can have these for any meal you want because I ate them for dinner and they were so good! They hit the spot! So whenever you want to cook these up, go for it!We won't judge what time you eat them at.
I of course added my own Leanne Pizazz by adding some feta cheese and lemon zest for some brightness. You can use whatever cheese you have on hand, but I like the saltiness the feta adds. If you have a box grater, that would be the easiest tool to use to shred the zucchini. Make sure after you shred the zucchini to wring it out with a paper towel or clean dish towel.If the zucchini is soggy, the latkes will be soggy. That would be a sin.
You can even make these smaller and serve them as an appetizer for a party. That would be delicious! A nice dipping sauce to serve with these is my old reliable Greek Yogurt and lemon juice. This is such a light meal. Perfect for summer and perfect for being so versatile!This recipe makes 2 servings ( or one large serving for 1.) Yes, I ate all six. Don't judge me.
Zucchini & Feta Latkes
Ingredients:
- 1 medium zucchini
- 3/4 cup bread crumbs
- 1/4 cup feta cheese
- Zest & Juice of one Lemon
- 1 egg
Directions:
1. Grate zucchini into a bowl and then wring out with a paper towel or clean dish towel.
2. Add bread crumbs, feta and lemon zest and egg.
3. Make sure mixture is not too wet. If it is, add more bread crumbs. If it is too dry add another egg.
4.Form patties and pan fry on medium until golden with 1 tbsp of olive oil or cooking spray.
5. Make Dipping sauce of 1/4 cup Greek yogurt and juice of one lemon to thin out.
Yay, another delicious use for all of that zucchini that is starting to show up at the farmers market and in my friends/family gardens! I love the idea of adding feta. This one is a keeper!
