Could an amazing and easy meal get any better? I saw a recipe via Rachael Ray for these amazing triangles of goodness and I was pumped because literally a meal cannot get any easier. Because of our hectic schedule, I am always trying to find meals that are delicious and satisfying, but don't take more than thirty minutes to make. There are just some nights I want to be sitting on the couch with a glass of wine, not slaving over a stove. Have you been there?Yeah, I thought so.
I am obsessed with meals you can prep ahead. You can grill or saute the eggplant ahead of time and you are basically done. For a sauce I decided to add some of the mint and basil pesto I had left over, which was an amazing addition. If these veggies aren't your cup of tea you can add anything you would add to a pizza. You just want to make sure you brush the pita with olive oil so it gets crispy. You can even make it a fun thing with kids to let them each pick their own toppings and make their own pizza. Realistically, even without prepping ahead, this meal can be in your mouth in under thirty minutes. Score! To make this pizza cheesy and delicious I added fresh mozzarella and feta, but you can add whatever you have on hand. This combination was delicious though.
To make this pizza extra yummy, I topped it with some Greek yogurt for dipping. What a great addition! If you have it on hand, try it! You will not be disappointed.
Mediterranean Pita Pizzas
- 1 small eggplant, thinly sliced
- 2 tablespoons EVOO
- 2 pitas
- 1/2 cup tzatziki ( or Greek yogurt)
- 6 sliced cherry tomatoes
- 5 sliced olives
- 1/4 cup feta cheese
- 1/2 ball of fresh mozzarella chopped
- 1 tablespoon chopped mint
- Toss eggplant with 1 tablespoon EVOO; grill 6 minutes.
- Brush pitas with 1 tablespoon EVOO; top with tzatziki, grilled eggplant, tomatoes, olives and feta.
- Bake 20 minutes at 350 degrees . Sprinkle with mint .
