Coconut Shrimp with Mango Sauce




















I was watching my favorite guilty pleasure The Chew recently and I saw them make their own spin on coconut shrimp. Remember those shrimp caked in coconut flakes and fried to perfection with a sweet dipping sauce? Yup, me too. I think they are delicious. I did however like the idea of making what's already good better.

20 Minute Meals:Spicy Chickpea & Quinoa Bowls


I love meals that come together quickly! I started kickboxing recently ( what's up I <3 Kickboxing!!!) and my body is so exhausted when I get home I need a meal that is nutritious and easy. This meal actually reminds me of a meal I had in Paris with my sister in law Marjorie in her apartment. I remembered how delicious and easy it was so I decided to share it with you.

Baconey Guacamole Pizza


Picture everything you love about guacamole, crumbled bacon and goat cheese on a thin crispy grilled pizza crust. Yup, that's what this is. The smokiness of the bacon paired  tangy goat cheese and creamy avocado is delicious!I was in the mood for grilled pizza, but I wanted to change things up a bit. Instead of making one big pizza I made 5 small pizzas or pizettes ( which I think sounds much more fancy). This is perfect for couples or families that can't decide on the same toppings for their pizza. After all, toppings are very particular to each person. I really like bacon, pineapple and jalapeno or margherita. My husband on the other hand only likes pepperoni or four cheese and are you ready for this.... no sauce. Yup, he hates sauce. So usually we always order two pizzas, however pepperoni is growing on me.

Grilled Veggie & Goat Cheese Crostini


Summer is here people! I was looking for a light dinner and did not want to even step foot near my stove. I found this recipe on Whole Foods.com and I could not wait to get home and grill my dinner! These are what I would call a fancy open face sandwich and it could not be easier to cook! If you were looking for smaller portions for appetizer just use smaller portions of bread and slice veggies a bit smaller and this will wow your guests!

Zucchini & Feta Latkes


Hello easy and delicious breakfast,lunch or dinner! I suppose this is what Rachael Ray would call a BLD      ( Breakfast Lunch or Dinner) meal.  A really yummy restaurant in RI ( Crazy Burger !!!) makes amazing zucchini latkes, which they serve at breakfast and they are absolutely delicious! I think you can have these for any meal you want because I ate them for dinner and they were so good! They hit the spot! So whenever you want to cook these up, go for it!We won't judge what time you eat them at.

Mediterranean Pita Pizzas


Could an amazing and easy meal get any better? I saw a recipe via Rachael Ray  for these amazing triangles of goodness and I was pumped because literally a meal cannot get any easier. Because of our hectic schedule, I am always trying to find meals that are delicious and satisfying, but don't take more than thirty minutes to make. There are just some nights I want to be sitting on the couch with a glass of wine, not slaving over a stove. Have you been there?Yeah, I thought so.

Sweet Potato Chilli


Spring has not sprung in Rhode Island yet. We had one week where it was 80 degrees F every day, and now it has been dreary and rainy ever since. What happened to the sun? Please come back. Since this weather makes me want to instantly change into sweatpants I decided to make chilli to keep me warm on the dreariest or dreary days! Cauliflower Nuggets


So I dubbed these cauliflower nuggets because they remind me of chicken nuggets and actually kind of look  and taste like them, but of course they are cauliflower florets. These are the base for baked bang bang cauliflower ( pre-sauce) and I came to the conclusion these are just as delicious and would be a great meal or snack any day!

As an avid lover of Mexican cuisine in any form I was very excited when I saw this recipe. Since I am constantly on the run, I love those go to meals that I can put together fast, but are home cooked and delicious! Burritos are usually not so healthy. Don't get me wrong, I have had my share of burritos in the past. These burritos are healthier, but are just as tasty!

Power Up!!! Quinoa Salad

On to food. I cannot tell you how many times I eat some form of quinoa salad during the week. Since I go to school two nights a week I need to bring my dinner to class. God forbid I make myself a sandwich! I think this recipe is a winner. I call this Salad Power Up because it has all of the components of a healthy meal you need: Protein, Fiber, Veggies. I mean does it get any better?

Baked Bang Bang Cauliflower


I have literally never been so excited to write a blog post in my life! A few months ago I attempted baked bang bang shrimp, which I was so excited about because I baked the shrimp instead of frying. Well people, let me tell you- I have outdone myself! I found a recipe on the blog That's So Michelle and I could not have been any more excited to make a dish for this blog! I had some cauliflower florets left over so I thought this would be a great way to use it.

Goat Cheese & Potato Pizza


I am going to dub this pizza the carb-o-licious pizza. Not only are you eating a carbohydrate filled crust, you get to eat potatoes on top also! Hooray! I decided to add extra deliciousness to the pizza by adding goat cheese. I grew up eating a similar recipe of potato pizza that my mom would make. I love white pizza. Sometimes you just don't need sauce!

Greek Style Pasta Bake


I love Greek food. So many of it is fresh and uses tons of lemon, oregano, and other delicacies from an amazing country. When I think of Greece, I picture sipping on a cocktail on the island of Santorini and eating fresh fish with lemon. Yeah, this dish is nothing like that. It is rustic, hearty, and well.... probably fattening. I took an idea that I saw on The Chew called Pastitsio. I am familiar with this dish. In fact I have had it many times just never made it myself. My baked pastas for never failed me so I figured I would try it out.

Recipe Swap: Orecchiette with Roasted Tomatoes,Garlic and Spinach


Orecchiette, or little ears is one of my favorite pastas. It holds sauce really well and well... I really think they are so cute. Quick side story, my husband and I actually had the same favorite pasta dish when we first met. We both said we had only ever had one dish at the Olive Garden. We both dared each other to say the dish at the same time and we both said Garlic & Herb Chicken Con Broccoli.I almost died. So that is what we did on our first date. Went to the Olive Garden and both had chicken con broccoli.This dish reminded me of that.

Sweet Potato & Black Bean Burgers


WIAW is veggie themed this month, and what better way to celebrate than with Sweet Potato and black bean veggie burgers! I really enjoy making veggie burgers, but I find that I keep using the same ingredients. I found a recipe using sweet potato, which gave these great texture and just the right amount of sweetness! Here is a taste of what I have eaten since Monday. Don't judge my giant cupcake or cheese fries.

Coconut Braised Cod

I feel like I do not cook enough fish in general, so this was my chance. I have had a can of coconut milk lurking in my pantry for weeks just asking to be used. WIAW & Spicy Black Bean Soup


It's that time of the week again! What I ate Wednesday! Since this month is veggie themed I of course have lots to share!! I took Valentine's Day off this year for a "mental health day." And boy, was it needed. Between getting my MBA, working full time, and blogging I am stressed to say the least. A day to myself where I could do whatever I wanted sounded amazing. I ended up getting a hot stone massage ( OMG) and got all of the knots I accumulated from the past few months kneaded out! Gosh, did that feel good. After that, I spent the whole day lounging, watching T.V and I even got an oil change. My awesome husband even came home early from work before he had class so we could hang out! SCORE!

Cheesy Quinoa Mac & Cheese


I have discovered my new favorite dish. I am a huge fan of Quinoa as you have seen in some of my latest posts, but this recipe has put this super grain over the top. I love mac and cheese from every angle. The cheese, the crunchy topping, the richness. Gosh, it tugs at my heart strings. This recipe makes it at least healthy for you. I used reduced far sharp cheddar, almond milk, and quinoa. I say that is a major win. Leanne 1, thunder thighs 0.
