Coconut Braised Cod


I must confess, I was in the mood for "something different." I don't know what would constitute as different per se, but this recipe was not something I make often so it was different enough for me. I feel like I do not cook enough fish in general, so this was my chance. I have had a can of coconut milk lurking in my pantry for weeks just asking to be used. Now is its chance to be center stage in this super easy dish that I found on Wholefoods.com

Fabulous Fish & Chips


 Fish and Chips are why I love Rhode Island! Do people in other states actually eat fish and chips? I have no idea? I never really thought about it. Fish and chips are uber popular in the summer in New England and mostly because they are so darn good!The light flaky fish and the crispy batter slathered in tartar sauce ( and ketchup.Yum.) If you missed my post before, I got the cod from Captain's Catch in Warwick, RI. They have a ton of great local seafood that comes in that day! You can't go wrong with fish that was caught that day.
