Whole Wheat Pumpkin Bagels


Could Fall get any better? First off, Fall is my favorite season because the weather is mild ( well in New England anyway), the leaves are starting to turn different colors and there is pumpkin..... in everything. Some of my favorites include pumpkin lattes from Starbuck's, pumpkin ravioli, and now these whole wheat pumpkin bagels.

Warrior Food: Cranberry Walnut Granola


This weekend I participated in the Bold r Dash at a local ski mountain. I'm sure everyone has similar 5k races with obstacles in their home town. It was such a blast! Never in a million years would I have thought I could complete a 5K never mind a 5K with military obstacles that seemed impossible. By the end I was covered in mud, wet, with a huge smile on my face.

Cinnamon Spiced Zucchini Muffins


This time of year makes me crave  cinnamon and pumpkin spiced everything. I'm pretty sure everyone and their mother has some large surplus of zucchini either from their own garden or a family member pawning zucchini off on them. I love having zucchini on hand because you can make sweet and savory recipes. Does it get any better?

5 Ingredient Breakfast Cookies


Cookies for breakfast? Heck yeah! I saw these little morsels of goodness on Watching What I Eat.  I like the idea of having a breakfast that I can grab on my way to work and eat it whenever I want to. It is so hard for me to get up in the morning and cook myself a full breakfast so anything that can be cooked ahead of time I am game!

Birthday Funfetti Pancakes


What better time to eat cake than in the morning for breakfast! Saturday was my husband Toby's 30th Birthday and he requested these delicious pancakes. The trick to these is to add cake mix so they come out super thick and fluffy. The best part of these is the syrup. No need for maple syrup. The syrup for these little babies is basically icing and sprinkles. Heck yes!

Chocolate Espresso Muffins


Could breakfast get any better? You get your caffeine fix and your chocolate fix all at the same time! Score. After eating my fare share of these, they could also realistically be cupcakes also. These actually share a close resemblance to Hostess Cupcakes. I may remake these and attempt to fill them with that luscious cream filling that everyone remembers from our childhood. Is it bad we will be eating a muffin that resembles a Hostess cupcake for breakfast.. maybe? Oh well.

Zucchini & Feta Latkes


Hello easy and delicious breakfast,lunch or dinner! I suppose this is what Rachael Ray would call a BLD      ( Breakfast Lunch or Dinner) meal.  A really yummy restaurant in RI ( Crazy Burger !!!) makes amazing zucchini latkes, which they serve at breakfast and they are absolutely delicious! I think you can have these for any meal you want because I ate them for dinner and they were so good! They hit the spot! So whenever you want to cook these up, go for it!We won't judge what time you eat them at.

WIAW & Bacony Breakfast Pizza


Is" bacony" a word?Probably not, but basically I want you to know this pizza is covered in bacon.Magical, mapley (yup, not a word either) bacon. I was trying to think of what to have for dinner tonight and it came to me while I was spinning (hey at least I was exercising)- breakfast pizza. Breakfast pizza is a great meal for breakfast, lunch, or dinner.It would even be nice for a brunch. There are even so many ways you can prepare it. If you have alot of time you can make your own dough. If you are in a rush you can use refrigerate dough. But before I get to the recipe, let's see what I ate this week for WIAW!

Zucchini Feta & Onion Fritatta


When I tell you this is one of the easiest things I have ever made, I am not lying. I had some eggs, cheese and leftover veggies and I came across this wonderful recipe! Feel free to substitute any veggies you have on hand or if you like egg whites instead feel free to use those. I love goat cheese, but had feta on hand so I used that instead. I would call this meal a B-L-D meal, which in the words of Rachael Ray means you could eat this for breakfast,lunch, or dinner. I made it for lunch and although the serving size is just one, you can easily multiply this for a crowd.

Chocolate Peanut Butter Granola Bars


These are delicious! Even better- they are preservative free!



We are on Day 6 of healthy eating for the week. I found this recipe on Pinterest ( my new obsession)  originally posted on How Sweet Eats. After seeing how easy it is to make your own granola bars, I couldn't help but think," why have I been spending $4 for a box of eight granola bars?"

A Healthy Start to Your New Year: Egg & Veggie Tostadas


Attention Readers: I have officially left my couch. Hurray! I went to spin and after working up a sweat I figured I should eat healthy too. I notice when I work out more I make better eating decisions, which is never a bad thing. I usually eat fairly healthy, but this week since lots of people are making resolutions to eat healthier I am planning on writing a weeks worth of healthy recipes! I had a few in my repertoire, and I have found some really good ones to try.So check in this week and see what healthy recipes I am cooking up!

Lucious Lemon Ricotta Muffins

MMMmmmmm

So I had extra ricotta from the lasagna I made Sunday and I had no idea what to do with it. I searched for recipes and found these little babies. I adapted these from Giada's De Laurentiis's recipe. Her recipe had almond extract,which I love,but I didn't have any. I did however have lemon extract. I love lemon and there was already lemon zest in it so it was perfect. I used that instead. I also didn't have almonds so I omitted. whatever- cook with what you have right? I also ended up cutting the amount of sugar in half. They tasted great without it. I also added this awesome strawberry preserves from the Loveless Cafe ( what's up Nashville????)The combination of lemon and strawberries was delish. If you have fresh fruit by all means add it in! Can I just say these may be my new guilty pleasure. They are a cross between a scone and a muffin. The lemon extract was a nice added touch to the batter. To bump the yum factor up a notch I made a lemon icing with confectionary sugar and lemon juice. People- make this icing. Tart.Smooth.Delicious. These are great for breakfast or a brunch for a crowd. They would be cute as mini muffins also. Enjoy!!
