Cinnamon Sugar Mini "Donut" Muffins



I tried this recipe on a whim this weekend. I always drool over cinnamon sugared anything so when I first saw this recipe I could not wait to try it. I seem to always prefer snacks in mini form so I made these to resemble donut holes. They actually very much reminded me of donut holes because they are perfectly popable ( is that a word?) and they are sugary and delicious. 
The next exciting moment of making this recipe was realizing there were minimal ingredients needed and I had all of them in my pantry. Yes! These little donut muffins are so easy to pop in your mouth by the handful. My husband came downstairs and ate five without blinking. I had to stop him because I didn't even take a picture for this blog yet!Oh mini muffin tins, not making you realize how much you are actually eating because everything that comes out of them are so tiny!Good luck keeping these on a plate when you make them!



Cinnamon Sugar Mini "Donut" Muffins from Velvet Lava

Ingredients:
1/3 c. butter, melted
1/2 c. sugar
1 egg (preferably room temperature)
1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk

Topping
1/2 c. sugar
1/2 c. butter, melted
1 tsp. cinnamon

Directions:
Preheat oven to 350F.

In a medium-large bowl, sift together all dry ingredients.

Add wet ingredients and stir just until combined, but still a bit lumpy. Do NOT overmix; overmixing will ruin the texture of the finished muffins.

Scoop batter into muffin tins that have sprayed with cooking spray. Using a large ice cream scoop. A mini muffin tin will yield 24 muffins. This recipe will yield 10-12 regular sized muffins.

For a mini muffin tin, make for 15 minutes. For regular sized muffins bake for 20-25 minutes, or until they just start to turn a bit golden at the edges.

For the topping, mix sugar and cinnamon in a small bowl. Place melted butter in another small bowl. Dip the warm muffins in melted butter (you can dip just the top, but it's even tastier to dip the whole muffin!), then dip/roll the muffin in cinnamon sugar.

  3. these look amazing! and just b/c i love to dunk would love some kind of a warm nutella sauce to dip them in to really make them sinfully delicious ;)

  4. the first time i had these was at a bread & breakfast in new orleans... they were sooo good, I couldn't stop eating them! i've made them at home several times. love them!
