Veggielicious Cauliflower Crust Pizza


Calling all veggie lovers! This was my first attempt at making the newly popular cauliflower crust pizza.I have heard horror stories about the crust not being crispy, about the loads of cheese in it and that it is just a pain in the butt to make. This recipe dispelled all of these pizza rumors. First off, there is not a boat load of cheese in the crust ( which makes my thighs happy.) This was actually really easy to put together and the crust actually held together pretty well!

This recipe also intrigued me because there were greens in the crust. I tinkered with the recipe from { insert blog name here} and made it my own. I have been on a kale kick lately and had it on hand so I added that instead of spinach. It made to be a delicious addition! I also didn't really dirty any pots or pans which I always love! If you are eating low carb, or just want to get all of your veggies in then this is the healthier pizza option for you!

Veggielicious Cauliflower Crust Pizza

Ingredients:
    1/2 cup of your favorite Pizza Sauce
    1 Cups  Mozzarella Cheese
    1 Cup Parmesan Cheese
    3 Cups Fresh Kale or Spinach
    6 Cups Chopped Cauliflower
    2 Large Egg Whites
    2 cloves of garlic, chopped   
    1/2 Cup Diced Bell Pepper
    1/2 Cup Sliced Red Onion
     Feel free to add whatever toppings you like!

   Directions:

1. Microwave Cauliflower in a microwave safe bowl for 6 minutes( or until tender.) Add to mixer and mix for 4 minutes on medium.( Cauliflower might be jumping out of the mixer at this point.) That probably means it isn't soft enough. So put back in micro wave for a minute or two.

2. Chop kale and add to mixer with cauliflower. Add egg whites, garlic and 1 cup of parmesan cheese to mixer. Keep mixing on medium until a foamy texture appears.

3. Preheat oven to 425. Spread the mixture onto a greased baking sheet with a spatula and flatten it out until there are no holes.  Bake for 10 minutes. Make sure crust is evenly spread out.

4. Add 1 cup of mozzarella cheese, bell peppers, sauce and onions on top of crust cook for another 10- 13 minutes until crust is lightly brown and toppings are cooked. Take pan out of oven and run a spatula under the crust to make sure it is done. ( Middle might take more time to cook then the outer part.)

5. Cut and Serve!

  1. I have yet to try cauliflower pizza crust because I was pretty skeptical about it. Thanks for taking the plunge and testing it out - yours looks gorgeous and delicious! I won't be afraid to make it now! :)

  2. I love the green colour you have going on in there! It looks way more appetizing that way than just white cauliflower. I'm definitely adding kale or spinach next time I make this!
