20 Minute Meals:Spicy Chickpea & Quinoa Bowls


I love meals that come together quickly! I started kickboxing recently ( what's up I <3 Kickboxing!!!) and my body is so exhausted when I get home I need a meal that is nutritious and easy. This meal actually reminds me of a meal I had in Paris with my sister in law Marjorie in her apartment. I remembered how delicious and easy it was so I decided to share it with you.



You can realistically use whatever you have in your fridge in this dish. I decided to use fresh spinach, tomatoes, zucchini and garlic. In Paris we added sausage and it was a delicious addition. You can serve this simple meal with quinoa and a dollop of Greek yogurt and lemon zest. I love the lemon zest because it brightens the flavor of the dish.

You can even make this into a soup. I added chopped tomatoes ( fresh or canned) but you can also add the tomato juice from the can and it will be more like a soup. Either way it is delicious!


Chickpea & Quinoa Bowls



















Ingredients:
1 can of chickpeas
I small can chopped tomatoes
3 handfuls of fresh spinach
2 cloves of garlic
1 zucchini chopped
1lemon
Greek Yogurt for topping

Directions:
1. Chop garlic and zucchini and sauté on medium low until golden brown in a large pan
2.Drain tomatoes and add chopped tomatoes and spinach and drained chickpeas. Let chickpeas warm through and serve over brown rice or quinoa.
3. Top with Greek Yogurt and lemon zest. Voila! Delicious & healthy meal in 20 minutes!

  1. Made this tonight exactly as listed and it was very basic, but hit the spot. I was looking to have a vegetarian inspired night.

    Subbed whole peeled tomatoes in a can and used sour cream on top top vs greek yogurt since that is what i had.
    Next time I probably will not drain the tomatoes just to keep the sauce for simmering in. Also it could use a little bit of spice. I put sweet paprika and cajun seasoning, but maybe next time try cumin or something to add a little bit of spice.

    As a college student, I rate this recipe as good + easy :) Thanks!
