5 Healthy Superbowl Munchies

So the big day is coming up... .The Super Bowl that is. I always think it is good to offer guests healthy and some not so healthy options. Since my healthy eating mantra involves sticking to mostly healthy foods and eating the occasional unhealthy burger.nachos.donut.gravy cheese fries.... you know or whatever I find. For this week I am dedicating blog posts to both healthy appetizers for your Super Bowl Party and some not so healthy appetizers. All of these appetizers are my guests usual favorites so rest assured these recipes are where its at! Let's start the week off with some healthy appetizers!

Cobb Salad Chicken Burgers


I get my best ideas when I work out. I mean really, what else should you be doing when working out other than thinking about your next meal? There must be something wrong with that for sure, but for me it works. I usually come up with great food combinations or blogging ideas when I am pumping iron or getting my butt kicked in kickboxing class. This burger was a brain child of one such moment when I was sweating and I thought, I love cobb salad. I love burgers. I am going to make a cobb salad burger.

Cranberry White Chocolate Chunk Biscotti


 Biscotti are the perfect treat to eat along side a steaming mug of hot cocoa or coffee while lounging on the couch on a Sunday morning. That was exactly what I was thinking of  when I woke up this morning. So I did what any normal gal would do.... I got up and made some biscotti!

Outside the Kitchen: Providence Coal Fired Pizza


I have heard great things about Providence Coal Fired Pizza for the last month so I could not wait to try out another take on the classic pie. Pizza is no new thing to Providence or the world really. It is so easy to make a mediocre pizza and there is a ton of it out there.This pizza is no such thing! It is delicious!

Cinnamon Sugar Mini "Donut" Muffins



I tried this recipe on a whim this weekend. I always drool over cinnamon sugared anything so when I first saw this recipe I could not wait to try it. I seem to always prefer snacks in mini form so I made these to resemble donut holes. They actually very much reminded me of donut holes because they are perfectly popable ( is that a word?) and they are sugary and delicious.

Skillet Lasagna


I love slow cooked recipes like lasagna. They make me warm on cold days and remind me of home. Being uber Italian, lasagna for my family signified a big day. We always had it for a birthday, Easter and Christmas. The creamy layers layered with rich meat and lets not forget the noodles. I love everything lasagna has to offer. Everything except for the amount of time it takes to make it! I'm all for taking all day Saturday to make a lasagna, but during the week I am looking for lasagna taste that takes much less time to cook.

Roasted Tomato & Eggplant Pasta


When the weather starts getting chilly, pasta is the first dish I reach for! I am always trying to make pasta dishes a bit lighter and this one was a winner! I love the meaty texture of  roasted eggplant and it pairs perfectly with the super sweet roasted tomatoes. I also love when alot of the cooking time is done in the oven and I don't even have to do anything!

Hello 2013! Food Trends to Salivate Over

2012 was a great year for my blog, myself, and my family. With one year of blogging under my belt, I feel confidant about my recipes and my point of view and I'm gaining new readers every week. My husband and I got the love of our lives, Meatball the Wonder Pug and my husband and I had our one year wedding anniversary! Because of this I am super excited for what 2013 has in store for me! I read an article about 2013 Food Trends and  I wanted to share it with all of you! For those of you who missed it, I wrote about 2012 food trends in 2011 and a bunch of them were really popular.2012 was the year of the potato, um heck yeah it was. I even have a whole pinterest board dedicated to Spud Love.
